XMAS HAMS - wood smoked & salted

Pickled in Pacific Ocean sea salt, and naturally mined German pink rock salt brine, then wood smoked for 12 days in local iron bark, saw dust and birch * whole leg * half leg or portion of leg * true free range pastured * no added nitrates & chem-free * no artificial preservatives * no hormones, antibiotics or growth promotants

TRUE FREE-RANGE - HUMANE CHOICE - HOLISTIC and ETHICAL, PASTURE RAISED


BOSS MEATS is a small cottage producer who are also gourmet butchers with a processing facility on their property at Stanthorpe. Greg from BOSS MEATS has been involved with the Organics industry since the early 80's and has been an organic farmer. ALL animals are either rasided on the property, or souced locally from holistic farmers who are raising both certified organic and true free range holistically farmed animals. 

 ABOUT THE PIGS:

  • Heritage breed pigs (predominantly black) which are resistant to disease naturally
  • True humane-choice,  free-range and pastured, non-intensively raised prigs
  • healthy and well cared-for pigs
  • very flavourful, quality and fresh
  • no growth promotants, antibiotics, steroids, hormones, pesticides or chemicals goes into our product
  • our pork contains no added non-noaturally occuring nitrates or artificial preservatives and is cryovac packed fresh

HOW ARE THE HAMS MADE AND WHAT'S IN THEM:

  • pickled for 10-12 days in brine of natural Pacific Ocean sea salt & German pink rock salt
  • cured for approximately 12 hours in wood smoke consisting of 80% local Iron Bark wood, saw dust and Birch wood
  • cyrovac packed
  • no articifically introduced nitrates

HOW TO STORE HAM:

  • Rinse Ham Bag in a solution of water and one tablespoon of vinegar and squeeze out the excess.
  • Wipe ham clean with a damp cloth.
  • Place ham in the Ham Bag and refrigerate.
  • Rinse out your Ham Bag every 3 days to retain freshness.
  • Keep your Ham Bag moist.
